LIBA SPIRITS IS A NOMADIC DISTILLING COMPANY. INSTEAD OF BUILDING A SINGLE FACILITY, WE TRAVEL THE WORLD, renting time in OTHER PEOPLE’S DISTILLERIES, PRODUCing EACH OF OUR SPIRITS IN unique locales USING REGIONAL RAW MATERIALS.

IT WASN’T UNTIL WE’D BEEN OPERATING NOMADICALLY FOR A WHILE THAT WE CAME UP WITH TERRATIVO, A FIRST-OF-ITS-KIND LINE OF APERITIVOS AND APERITIFS THAT PROVE DISTILLING CAN MAKE MORE THAN JUST A SPIRIT.

WE DON’T MEAN TO BRAG, BUT THE TERRATIVO LINE IS PRETTY UNLIKE ANYTHING YOU’VE EVER TASTED. TO CONDENSE A WHOLE LOT OF HISTORY AND SCIENCE DOWN INTO ONE SENTENCE, MAKING INFUSED LIQUEURS IS LIKE MAKING TEA FROM ALCOHOL THAT YOU THEN SWEETEN. MOST PRODUCERS USE A BULK-DISTILLED NEUTRAL, FLAVORLESS SPIRIT TO INFUSE INTO. MANY USE FLAVORING OR DYES TO CREATE OR ENHANCE THE CHARACTER.
WE CHOSE A DIFFERENT PATH.
WE MAKE EACH PRODUCT IN THE TERRATIVO LINE BY DISTILLING OUR OWN FLAVORFUL SPIRIT AND THEN INFUSING THAT FINISHED SPIRIT WITH ALL WHOLE, NATURAL INGREDIENTS, FINALLY DOSING IT WITH SUGAR WAY BELOW THE STANDARD. THESE INFUSED LIQUEURS ARE VIBRANT, FLAVORFUL, AND COMPLEX WITH A CLEAN FINISH. THEY’RE “JUST ADD WATER” SPIRITS, PERFECT FOR DRINKING AT HOME OR OUT ON A BOAT OR THE ITALIAN COUNTRYSIDE, WHEREVER YOUR JOURNEY HAS TAKEN YOU.

OUR FIRST TWO DISTILLATIONS, IN THE AUSTRIAN ALPS & NEW ORLEANS, WERE A REFLECTION OF THE BEGINNING OF OUR IDEA: WHAT WOULD IT LOOK LIKE IF WE MADE EACH OF OUR SPIRITS IN DIFFERENT PLACES AROUND THE WORLD, USING SOMEONE ELSE’S DISTILLERY LIKE A GHOST KITCHEN, AND MAKING USE OF REGIONAL RAW MATERIALS?

■ LIBA GIN - THE AUSTRIAN ALPS
OUR FIRST DISTILLATION, AND WE REALLY WENT FOR IT. WE WENT TO A SMALL VILLAGE IN THE AUSTRIAN ALPS TO WORK OUT OF A FARM, ORCHARD, AND DISTILLERY THAT HAS BEEN RUN BY THE SAME FAMILY SINCE 1643.
SINCE THE DISTILLERY WAS ONLY 40 MINUTES NORTH OF THE ITALIAN BORDER, WE DECIDED TO MAKE A GIN WITH BOTH ITALIAN AND AUSTRIAN INGREDIENTS. PILING INTO A SPRINTER VAN, WE DROVE THROUGH THE DOLOMITES TO STOCK UP ON FRESH LEMONS AND ORANGES. THEY WERE PREPPED BY HAND BACK UP IN AUSTRIA, ALONGSIDE ROSEMARY, NUTMEG, GINGER, BLACK PEPPER, CORIANDER, CARDAMOM, LONG PEPPER, AND OTHER BOTANICALS.
